Breakfast spaghetti isn’t just for Buddy the Elf! This savory breakfast pasta was inspired by carbonara and features sausage, cheese, and eggs to keep you fueled all day long!

As my kids got bigger and hungrier, somehow overnight they all morphed into loveable (but very smelly) bottomless pits.

They reminded me a bit of baby birds.

As soon as the sun hit their window they were awake and squawking for food.

And there was never enough food.

They would plow through bowls of cereal and demolish fruit.

Chug glasses of milk.

I served these kids a full breakfast and they were still hungry.

How in the heck was I supposed to keep up?

I mean there were a whole table full of them!

Keeping my troops fed and filled up on a budget was tough.

Sure, eggs were a no brainer, and but I really needed a carb.

And what better than pasta?

It’s cheap and who doesn’t love spaghetti.

Thus breakfast pasta, or breakfast spaghetti as the sons dubbed it, was born and loved by all- even though we don’t cover it in maple syrup and candy a la Buddy the Elf.

What is breakfast spaghetti?

Well, there’s the Elf version featuring a ton of candy and syrup over a plate of pasta and then there’s my version.

This version of breakfast pasta features cooked crumbled breakfast sausage, eggs, and cheese.

A classic combination of flavors with a unique twist!

It’s basically breakfast carbonara.

Pasta Carbonara- For Breakfast!

Pasta carbonara is a classic Italian staple and most typically a dinner time favorite even though it features ingredients you see on the breakfast table all the time!

It’s basically a creamy mixture of pasta, eggs, and bacon.

Only a hop skip and a jump from breakfast right?

Ingredients

To make this you’ll need:

  • Butter– To coat the bottom of your skillet
  • Breakfast sausage– Cooked, broken up and drained. You could substitute cooked, crumbled bacon if you prefer.
  • Spaghetti– Cooked according to package instructions
  • Eggs– Beat them until they are smooth.
  • Cheese– Shredded cheddar but use whatever you like!
  • Salt and pepper– To taste

How to Make

Breakfast spaghetti is super simple to put together!

To do it, melt the butter in a large skilletover medium heat.

Roll the melted butter around in the skillet until it completely coats the bottom.

Spread the cooked pasta out in the skillet and the pour the beaten eggs evenly out over top of the pasta..

Then spread the sausage out evenly over the pasta.

Top everything with cheese, and give the dish a good stir to evenly combine it all.

Continue cooking, stirring as needed, just until the eggs are cooked.

Sprinkle on salt and pepper to taste.

Serve and enjoy!

Can I make this the night before?

While I don’t recommend making the breakfast spaghetti itself the night before, you can prep some of the ingredients the night before to make for an easy morning.

I recommend cooking the sausage and the pasta the night before and storing them in individual airtight containers in the fridge.

Then the next morning you have everything you need ready to go and it should only take you a few minutes to throw it together.

Storing Leftovers

I don’t recommend planning for leftovers but if you have some left store them in the fridge in an airtight container for up to 2 days.

Tips and Tricks

  • Don’t have ground breakfast sausage? You can easily substitute cooked sausage links, but I’d recommend thinly slicing them first.
  • Worried the eggs won’t be fluffy enough? Whisk a tablespoon or two of cream into your beaten eggs. It’s not necessary but always yields smoother, fluffier scrambled eggs and check out my tips for making the best scrambled eggs.
  • Pile on extra topping and serve each plate topped with crisp crumbled bacon and thinly sliced green onions for the ultimate indulgent breakfast on a dime.

Ingredients

  • 2 tbsp butter
  • 1 lb breakfast sausage cooked, broken up, and drained of grease
  • 1/2- 1 lb spaghetti pasta cooked according to package instructions, drained, and rinsed
  • 8 large eggs beaten until smooth
  • 3/4 cup shredded cheddar cheese
  • salt & pepper to taste

  • Salt & pepper the breakfast pasta, to taste, ladle onto plates and serve warm. Enjoy!
